- 1 lb. spaghetti pasta
- 3 Tbsp. salt
- 2 – 3 Tbsp. olive oil
- 3 large garlic cloves, minced
- 4 Tbsp. butter
- 1/4 cup fresh-squeezed lemon juice
- zest of 1 lemon
- 1–1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- freshly minced basil (for garnish too)
- lemon peels (for garnish)
Instructions
1. Boil water in a tall pot.
2. Add about 3 Tbsp. of salt to the water before adding the pasta.
3. When the water is boiling, cook the pasta for 7 minutes or until ‘al dente’ (the pasta will have a tiny bit of firmness).
4. In a large frying pan, heat the olive oil.
5. Add the garlic to the hot olive oil and saute’ for 1 minute.
6. Stir.
7. Add 4 Tbsp. of butter; stir again.
8. Add lemon juice; stir again.
9. Add heavy cream; stir again.
10. Add Parmesan cheese; stir again.
11. Add minced fresh basil; stir again.
12. Add the spaghetti once it is cooked (al dente); gently stir.
13. Place the spaghetti on plates and garnish with minced basil and tiny slices of lemon peel. Lemon slices and full stems of basil leaves are also nice for a garnish.
14. Serve immediately along with a small bowl of extra freshly-grated Parmesan cheese.
