On a medium-heat burner, add the olive oil to a large frying pan/skillet wide enough that the # of pork chops you prepare will fit nicely and not touch each other.
Season the pork chops on both sides with salt, pepper, and any of the optional seasonings listed in the ingredients.
Place the pork chops in the hot oil, being careful to stand back if they sizzle too much and of any oil shoots out of the pan. Turn the heat down if necessary.
Saute for 3 minutes on each side until a nice golden sear develops.
Move the pork chops to the sides of the skillet and add the butter to melt.
Add the minced garlic, rosemary, sage, and thyme. Saute for 2 minutes on medium-low heat. While cooking this sauce, spoon it over the pork chops constantly. Watch the garlic . . . when golden brown and fragrant, remove the sauce from the pan. The pork chops should be done as well.
Plate the chops, pour the herb butter sauce all over the tops of the chops, and serve any extra sauce in a small pitcher/cup to pass around the table.
Garnish with a fresh leaf or two of sage.
