Where To Eat in St. Thomas — Room With A View
If you’re planning on a trip to St. Thomas in the U.S. Virgin Islands, one of the most highly recommended restaurants is located on the side of the mountain with a view of the bay. It is also part of a quaint little resort with an old castle said to be used by the Caribbean pirate, Blackbeard. The small property is appropriately named Blackbeard’s Castle Hotel and Resort and the restaurant, “Room With A View” is inside the hotel.
The blue painted shutters above tropical landscaping reflect the clear blue colors of the sea below. Although the evening was quite rainy, it did not take away from the evening.
A fun, retro designed menu that opens up to an extension menu, primarily seafood based options. The menu doesn’t change due to popularity of the each entree, although the server did note two specials for the evening.
Pristine white linens may give the first impression of a stuffy formal place, but the atmosphere was lively and filled with laughter and conversation among delighted guests. Every table was full within minutes of opening the doors.

Starting with cocktails and a refreshing mojito . . .
Moving on to appetizers, these unique offering of prosciutto wrapped mangos in a mango sauce was devoured in seconds . . .
One of the restaurant’s favorite fish entrees was this salmon (above). I wish I could get my hands on this recipe, it was just perfect and was a wonderful size for the money.
Mangos shine again in the dessert menu and it’s not every day that I can find mango cheesecake, so this was a no-brainer. Again, just excellent!
Ending the evening, we enjoyed coffee prepared in a way that I haven’t seen on any menu for decades: Coffee with Five Liquors! Ahhh!
I first enjoyed this coffee in California and was able to obtain the recipe. It’s very easy to make at home and great for special occasions and dinners with family and friends.

<strong>Millionnaire Coffee</strong>

I first enjoyed this coffee in California, but with Creme de Cocoa in place of Kahlua, Brandy in place of Bailey's, and Cognac in place of Frangelico. Actually, add whatever you like!
Ingredients
- Good quality brewed coffee
- Bailey's
- Kahlua
- Frangelico
- Grand Marnier
- Tia Maria
- Sugar
- Whipped Cream
- Shaved chocolate
Instructions
- Prepare high quality coffee of your choice.
- Add equal portions of each liquor.
- Whip the cream.
- Dip the rims of the glass or cup in water and then sugar.
- Pour coffee and liquors into the glass or cup.
- Top with a large dollop of whipped cream.
- Sprinkle the top with shaved chocolate.
