Ingredients
- 1 mango, seed removed, chopped into small chunks
- 2 cups fresh pineapple, chopped into small chunks
- 3 small fresh tomatoes, chopped into small chunks
- 1 red bell pepper, chopped into small chunks
- 1 small – medium sized jalapeño chili pepper, seeds removed, finely diced
- 1/2 red onion, diced
- 1 cup cilantro, finely diced
- 1/2 tsp. ground ginger
- juice of 1 lime
- 1 Tbsp. rice vinegar
- 2 cloves fresh garlic, minced
- 1 tsp. sugar
Instructions
- Mix all ingredients together.
- Serve as an appetizer with tortilla chips.
- Or serve on the side of grilled swordfish or fish of your choice.

This dish is so pretty! I just love the colors. I have trouble finding ripe mangos here, but I think part of the problem is I don’t really know how to tell if they are ripe unless they are the small yellow ones, which I can’t find very often. You are right, I should just ask the produce people at the store! Saving this recipe and pinning for when I do find some! Thanks, Roz!
