Pork Chops in Garlic Herb Butter Sauce

These pork chops in garlic herb butter sauce are a big hit. This recipe is seriously a ‘lick-the-plate-clean’ recipe! It’s a ‘hit-the-ball-out-of-the-park’ smash winner and one that I know will be on your repeat menu too!
First of all, my husband and I put this together in under 30 minutes. And you don’t need many ingredients. If your pantry is well-stocked, you’ve got the goods already on hand.
The first thing I did was grab my garden shears and a basket and go out to my kitchen garden to snip fresh herbs: sage, rosemary, and thyme. I had garlic in my kitchen since I didn’t grow any, but I will soon. Garlic is a must-have in my kitchen, so I’m never out of it.
When you purchase the pork chops, look for boneless, extra-thick cuts with a minimum thickness of 1-1/2 inches. Cook them the day you bring them home. Or within one or two days at most, so they stay fresh. This helps you plan meals and minimize waste.

- 2 – 4 THICK-cut boneless pork chops
- Olive oil
- Butter
- Garlic
- Herbs: Sage, Rosemary, and Thyme
- Sea Salt and Black Pepper
- (optional): Mrs. Dash salt-free seasoning, and Nature’s Seasons

Here’s a frying pan that I bought and absolutely love, it’s extremely non-stick and easy to clean! Inexpensive and also can be used on an induction burner/stove.

Pork Chops in Garlic Herb Butter Sauce
Ingredients
- 2 – 4 THICK-CUT, boneless pork chopw, at least 1-½" thick, even 2" is fine
- 2 Tbsp olive oil
- 6 oz. butter
- 3 Tbsp. fresh garlic, minced
- 1 Tbsp. fresh rosemary, minced
- 1 Tbsp. fresh thyme, minced (pulled off the stem)
- 4 – 6 leaves fresh sage, depending on how large the leaves are
- sprinkling Mrs. Dash salt-free seasoning, (optional)
- sprinkling Nature's Seasons, (optional)
Instructions
- On a medium-heat burner, add the olive oil to a large frying pan/skillet wide enough that the # of pork chops you prepare will fit nicely and not touch each other.
- Season the pork chops on both sides with salt, pepper, and any of the optional seasonings listed in the ingredients.
- Place the pork chops in the hot oil, being careful to stand back if they sizzle too much and of any oil shoots out of the pan. Turn the heat down if necessary.
- Saute for 3 minutes on each side until a nice golden sear develops.
- Move the pork chops to the sides of the skillet and add the butter to melt.
- Add the minced garlic, rosemary, sage, and thyme. Saute for 2 minutes on medium-low heat. While cooking this sauce, spoon it over the pork chops constantly. Watch the garlic . . . when golden brown and fragrant, remove the sauce from the pan. The pork chops should be done as well.
- Plate the chops, pour the herb butter sauce all over the tops of the chops, and serve any extra sauce in a small pitcher/cup to pass around the table.
- Garnish with a fresh leaf or two of sage.
