So even a small portion of this healthy protein is satisfying. And you’ve heard it forever: portion control matters. Whether trying to lose a few pounds or not (like my skinny husband), you’re going to love this recipe, trust me!
This recipe showcases salmon in a satiny sauce infused with delightful, robust Mediterranean flavors: garlic, sun-dried tomatoes, basil, and cherry tomatoes. And don’t forget cream and butter are northern Italian ingredients! This is one of those recipes that, when prepared on the stove, goes very quickly . . . so it’s best to have (as always) all of your ingredients chopped up, measured, and ready to just toss in the pan as fish cooks fast! And you don’t want to overcook the fish, or it becomes very hard and tasteless.
Ingredients You’ll Need For Creamy Tuscan Salmon

- Salmon Filets – Fresh from the fish case is always best; however, we purchase our salmon online, and it arrives frozen on dry ice (to place immediately in the freezer). Our favorite sources are: Sizzlefish and Wild Alaskan Fish Co. We wait to buy red sockeye salmon, especially Copper River sockeye salmon, which is only available during a small window of time in the summer. Use boneless salmon filets, preferably without the skin, but it’s fine if that’s what you have; it easily and quickly removes after cooking. Pink salmon and Atlantic salmon work fine too and are more cost-saving.
- Olive Oil and Butter – Use only good-quality olive oil AND butter. Olive oil burns easily, and the butter helps prevent it from happening. Cook on medium to low-medium to help further prevent burning. Tuscany is in Northern Italy, where more butter is used, which makes the dishes much richer and more decadent.
- Sun-dried tomatoes – Add a pop of tangy Mediterranean flavor. Use either dried or those packed in oil; but if you use those in oil, make sure you drain them and then dice them into small pieces.
- Cherry Tomatoes – Add freshness and a slightly sweet balance to the tangy sun-dried tomatoes. Try to use San Marzano cherry tomatoes if your grocer carries them.
- Garlic – Use fresh garlic cloves with no signs of mold or age.
- Heavy Cream – Northern Italian recipes, such as in Tuscany, use a lot of dairy, such as heavy cream or full-fat milk. Cream is what gives this sauce its thick texture and luscious, rich flavor. Use either heavy cream or regular whipping cream. Do not use non-fat or half and half cream or the results of the sauce will be watery and won’t hold together well.
- Parmesan Cheese – Use only freshly grated, good-quality Parmigiano cheese. Nothing tops off an Italian entree recipe quite like the king of Italian cheese and its incomparable nutty flavor! It adds a lovely bite, plus some natural salt, so be careful if you add additional salt.
- Onion – Adds another level of complexity to the sauce.
- Baby Spinach – For true Tuscan flavor, where spinach is used quite a bit in recipes, you’ll need a lot, but it cooks down quite a bit. Spinach adds not only a bright green color to the sauce, but also another earthy, veggie layer of flavor to the dish.
- Fresh Basil – Adds a layer of herbal flavor; try to use freshly harvested basil if possible.
- Italian Parsley – A must in Italian entree recipes; try not to use regular curly parsley, which has no flavor. This also adds a lovely pop of green color.
- Lemon Juice – Adds a zesty, bright, citrusy note to any fish and gives a bit of balance to the richness of the cream sauce.
- Salt and Pepper – Just a tad to enhance the flavors. Use as little or as much as you wish, or none at all. You can also use a salt-free herb seasoning such as Mrs. Dash

How to Make Creamy Tuscan Salmon
This looks like a lot of steps, but trust me, this is so crazy-easy. You’ll find the full step-by-step instructions in the video above and in the free printable recipe card below. You’re just going to love this recipe!
- Prepare the salmon – season the salmon filets on both sides with salt, pepper.
- In a wide, large skillet over medium heat, warm up the olive oil and then add and melt the butter. Once the butter is melted, add
- The diced onion and sauté for 1 – 2 minutes, and then add
- The minced garlic and sauté until fragrant, for 1 minute only, stirring constantly (do not burn the garlic).
- Add the salmon filets, skin-side down if you have skinned filets.
- Sauté the salmon for 2-3 minutes, then flip over and cook for 1-2 minutes on the other side. You do NOT need to brown the salmon in this recipe. If you’re concerned, a safe internal temperature of 145°F on an instant-read thermometer at the thickest part of the salmon means that the salmon is well-done. For us, we prefer salmon on the more tender side, which is not well-done. Well-done fish equals hard, tough fish.
- Remove the salmon from the skillet and place on a platter.
- Cover and tent the filets with aluminum foil and allow them to rest and keep warm while preparing the sauce.
- Using the same olive oil and butter base, add the sun-dried tomatoes, minus the oil.
- Add the cherry tomatoes and cook for about 4 – 5 minutes for the juices to combine.
- Add the baby spinach leaves. Continually stir while they quickly wilt, shrink, and darken.
- Add the cream and heat it up so that it melts the cheese in the next step.
- Add the Parmesan cheese and cook on low heat for a minute or two to thoroughly melt the cheese and thicken the sauce, stirring constantly.
- Add the Italian parsley and basil and blend well.
- Add a little bit, a few squeezes of fresh lemon juice.
- Place the salmon back into the pan with all of the sauce
- Spoon the warm sauce over the salmon filets and re-heat for about 2 minutes. Do not overcook.
- Garnish with more minced Italian Parsley and/or basil.
- Serve immediately with some delicious garlic bread/rolls to mop up the sauce along with some delicious side dishes provided below.
Bella’s Pro Tips:
- Remember that olive oil BURNS easily and quickly – Whenever cooking with olive oil, remember that it burns easily, so heat it on low and never raise the temperature to high.
- Don’t overcook garlic either – The same goes with garlic . . . it burns easily and becomes extremely bitter. An entire dish will be ruined from that point on. Sauté garlic for no more than 1 minute until fragrant.
- When buying salmon, first buy as fresh as possible. If the skin is on, it is easily removed once it is cooked on the skin-side and then place the skinless filet back into the pan to finish the dish.
- Salmon is completely cooked when it reaches an internal temperature of 145°F (63°C). You’ll see that the flesh is opaque and you’ll be able to flake off a piece easily with a fork and with no need to use a knife to cut. Wild-caught salmon cooks a little bit faster than farm-raised salmon, so keep that in mind too. Any thicker pieces require additional cooking time beyond what’s given in this recipe. Using an instant-read thermometer is highly recommended to ensure doneness when a temperature of 145˚F is registered in the thickest part of the salmon filets.
- Frozen salmon is great to use if it comes from a reputable fishmonger, such as where we purchase our fish: Sizzlefish or Alaskan Fish House are superior salmon sources, and the fish arrives frozen on dry ice. Place it in your freezer immediately or prepare it immediately.
- Do not brown the salmon for this recipe, or it will be overcooked. This recipe calls for a softer-textured result, and the amount of time necessary to cook it perfectly is provided if the filets are no more than 1″ thick.
- You can make the sauce thicker if you prefer simply by keeping it on the stove a little bit longer than indicated. The sauce will continue to thicken as it cools on the plates as well, so keep that in mind. If it gets too thick, simply add more cream and heat it up again.
Substitutions
- Parmigiano Romano Cheese – Grated Asiago or Pecorino Romano can be used instead. If you don’t want the tangy bit of these cheeses, use Fontina, which is an excellent Northern Italian melting cheese with an outstanding mild flavor.
- Sun-Dried Tomatoes – Using roasted red peppers is a delicious alternative.
- Spinach – Substitute kale if you prefer but give it more time to cook down and wilt.
- For Dairy Free – Use a plant-based ‘dairy’ such as almond milk or coconut milk/cream with the addition of more minced garlic.
What to Serve with Creamy Tuscan Salmon
Now it’s time to turn your Creamy Tuscan Salmon entree into a delicious feast by pairing it with side dishes that complement the dish. There are numerous, delicious possibilities. Because of the richness of the sauce, we love to serve this paired with any of the following side dishes. Prepare each as fresh as possible alongside the entree:
- Long-Grain and Wild Rice – This is my favorite that we always serve with fish. we use the #1 rated brand (for good reason) Uncle Ben’s Long-Grain and Wild Rice.
- Salad – Serve a fresh, leafy green salad lightly tossed with a light Italian dressing, no creamy dressings for this meal. A balsamic dressing is fine, but a red wine vinegar-based vinaigrette is much better . . . too many strong flavors on a plate is not a good thing, and very un-Italian. A Caesar salad would be too strong.
- Veggies – Freshly steamed broccoli, green beans, sweet baby green peas, asparagus, or colorful, mixed vegetables, all that are prepared ‘al dente’ in hot butter.
- Pasta – The cream sauce makes the perfect pasta sauce! Any shape of pasta will work well, whether it’s long or short pasta. Remember pasta with ‘holes’ catch sauces better (rigatoni, penne, mostaccioli, paccheri, for example). You can serve the salmon over a bed of pasta or with the pasta placed on the side of the salmon . . . if you serve it on the side, make sure to toss your pasta with either olive oil or butter (which my family prefers). YUM!
- Italian Bread/Toast – Plain or garlic-buttered, it’s perfect for mopping up the delicious sauce!
- Fruit – End your meal with fresh fruit in season, which is very typical of an Italian meal. Nothing heavy such as cakes or pies.
- Gelato and Biscotti – if you have it is perfect with a simple cookie or biscotti.
How to Store Creamy Tuscan Salmon
You may not have any leftovers of this wonderful fish, but just in case you do, it can be stored in the fridge for 2 – 3 days (max). Or you can reheat it in an oven or mini-oven (that we use to save electricity) for about 5 – 10 minutes at 275° F, covered with foil, until heated through . . . again, all depending on the number of servings that you’re reheating. It can be reheated in the microwave oven for 1 minute for one serving, or longer if needed for multiple servings. It won’t dry out too much in the microwave since it’s covered with the sauce.
Freezing? It’s not recommended, because it will completely lose it’s texture in both the fish and the sauce. You’ll gobble this up anyway!

- 1/2 tsp. freshly-squeezed lemon juice
- 1/3 cup fresh basil, chopped
- 1/2 cup fresh Italian parsley, chopped
